Editor’s Note: These are reports from health inspections in Lewis County between July and August of this year.
Lewis County Public Health’s inspections happen at various intervals, so reports from the health department include a few locations each.
Red violations are those most likely to cause foodborne illness and must be corrected at the time of inspection. Blue violations relate to overall cleanliness and operational conditions and must be corrected by established deadlines or by the next routine inspection.
Any establishment receiving 40 red points or any red point item repeated within an 18-month period is considered a high risk and must be reinspected. An establishment that receives 75 red points or 100 total points (red and blue) on a routine inspection or 40 red points on a repeat inspection will have their food establishment permit suspended.

The storage areas in the back had signs of pests. The business was instructed to call pest control to resolve the problem. (5 blue)

Holding temperature was observed at 45 degrees Fahrenheit. Food must be kept at 41 degrees or below at all times. (5 red)

Texaco, 118 U.S. Highway — 15/12/27
Chicken and gizzards were raw, when the business was only permitted for pre-cooked food. The business was instructed to upgrade to category 3 soon. (10 red)
The walk-in cooler was leaking and food was placed beneath it. Additionally, the fan and ceiling of the walk-in needed to be fixed. (5 blue)
A new employee was instructed not to date-mark items. (5 blue)
Active Managerial Control was not being maintained. (5 red)
The deep fryer reportedly hadn’t been maintained for years. (2 blue)

The handwashing station didn’t have soap available. (10 red)
Thermometers were not being used to ensure temperatures on food consistently. (5 red)
Cooling methods being used for eggs were not adequate. The business was instructed to cool the eggs uncovered or use a different method. (25 red)
A re-inspection will be needed.

The two-door slider containing sandwiches and other items was measured at below 50 degrees. The breaker was reportedly tripped early in the morning but the food was not transferred. (10 red)

Flies were reportedly everywhere in the establishment. (5 blue)
Foods were held at the incorrect temperature. (10 red)
Yogurt was cooling on the bottom shelf, while the business was not permitted to cool foods. (25 red)
Yogurt, milk and other items were discarded. (10 red)
Time as a control was not being maintained. (25 red)
